Strawberry Shortcake Protein Muffins

When I was little my mom would always get angle food cake and top it with strawberries. It was delish, but now if I'm going to have a treat I want to get more bang for my bites. These Strawberry Shortcake Protein Muffins are packed with nutrients and a perfect quick breakfast or healthy dessert!

STRAWBERRY SHORTCAKE PROTEIN MUFFINS RECIPE

Ingredients
  • 2 cup almond flour
  • 1/2 c LSF Vanilla Protein
  • 1/4 c coconut cream
  • 2 tbs honey
  • 2 tsp Vanilla
  • 1/2 tsp cinnamon
  • 4 large eggs room temp
  • 3/4 tsp baking soda
  • 4 tbsp coconut oil melted
  • 1/2 c strawberry sliced
  • 1/4 c coconut flakes unsweetened

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Mix first 9 ingredients until smooth using a hand mixer or blender.
  3. Gently fold in the strawberries and coconut flakes.
  4. Add to muffin cups and bake for 15-20minutes or until you can test with a fork or toothpick and come out clean.
